Dairy-Free Protein Powder Pancakes


Ingredients: (Serves 2)

  • 80 grams Rolled Oats (dry weight)

  • 120 milliliters hot water (to cook oats)

  • 1 30g scoop protein powder (blend or isolate)

  • 60 grams egg whites

  • 1/4 teaspoon ground cinnamon (to taste)

  • coconut oil spray

  • almond extract (optional:)

  • almond butter (optional)

  • blueberries (optional)

  • maple syrup (optional)

Preparation:

  1. Mix oats with hot water.

  2. Stir and let stand for a couple minutes till fluffy.

  3. Mix protein powder with the eggs and then mix this with the oats.

  4. Stir in the cinnamon and almond extract and fry on a hot griddle sprayed with coconut oil spray.

  5. serve with blueberries and small drizzle of maple syrup.
