Ground Beef And Zucchini Stir-Fry

Ingredients:

  • 0.5 kg. ground beef mince

  • 1 large zucchini, cut into zoodles

  • 1 onion, diced

  • 2 capsicum, thinly sliced

  • 1 head broccoli florets

  • 1 green onion, thinly sliced

Stir-Fry sauce ingredients:

  • 1/4 cup coconut aminos or soy sauce

  • 2 tbsp. rice wine vinegar

  • 2 tbsp. raw honey

  • 2 garlic cloves, minced

  • 1 tbsp. fresh ginger, minced


Preparation:

  1. In a bowl, combine all the ingredients for the stir-fry sauce.

  2. Brown the beef and the onion in a pan over medium-high heat.

  3. Stir in the capsicum and broccoli florets, cook for another 6 to 8 minutes until vegetables soften.

  4. Pour in the sauce, add the zoodles, and toss everything until well coated.

  5. Cook for another 2 to 3 minutes, adjust seasoning and serve topped with green onions.
